
French Onion Soup
I can eat soup any time of the year but it’s especially delicious on a cold winter night! A favorite in our house is cheesy French Onion soup. It’s simple and easy, but filling and comforting. Onions also have many health benefits-they contain antioxidants, help regulate blood sugar levels, have anti-inflammatory properties among other things!I served it with a green salad to complete the meal. You can omit the bread slices if you’re completely avoiding gluten or carbs. Turn your dining table into a cozy French bistro with this classic dish!

Ingredients
- 1/2 cup unsalted grass fed butter
- 4 sweet onions, sliced
- 2 garlic cloves, chopped
- 2 bay leaves
- 2 fresh thyme sprigs
- Kosher salt and freshly ground black pepper
- 1/2 cup red wine vinegar combined with 1/2 cup filtered water
- 8 cups beef broth
- Slices sourdough bread
- 10 oz grass fed Gruyere, grated
Directions
- Melt the stick of butter in a large pot over medium heat. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are very soft and caramelized, about 25 minutes.
- Add the vinegar mixture, bring to a boil, reduce the heat and simmer until the liquid has evaporated, about 5 minutes.
- Remove the bay leaves and thyme. Add the beef broth, bring the soup to a simmer, and cook for 10 minutes.
- Season, to taste, with salt and pepper.
- When you’re ready to eat, preheat the broiler.
- Place oven safe soup bowls on a sheet pan.
- Ladle the soup into bowls and top each with 1-2 slices of bread and top
- Put the bowls into the oven to toast the bread and melt the cheese.
